James Viles, culinary partner of The Ungasan Clifftop Resort and owner of the two-hatted restaurant Biota Dining has become one of Australia’s most respected young chefs and restaurateurs for his commitment to sustainability and his imaginative modern food. Viles will be hosting a once-in-a-lifetime world-class dining experiences at The Ungasan this August.
This exclusive and exceptional evening for 30 guests will be prepared and cooked by Viles alongside Chef de Cuisine Putu Matharda from The Ungasan Kitchen. The exquisite menu, which will be designed around Bali’s diverse and rich landscape, will also be matched with wines from Food and Beverage Director Lucas Stringer. Guests will gain valuable insights into Viles’ passion for propagating and foraging during an intimate talk about sustainable practices and sourcing produce ethically and his experience setting up BIOTA DINING in Bowral, NSW.
The evening will be located within one of the expansive Five-Bedroom Villa’s at The Ungasan Clifftop Resort. The villa will be transformed into an intimate dining space, emphasising it’s architectural design and stunning clifftop views of the Indian Ocean.
